Fox in the Hen House ‘Fox Hunt’ Cabernet Shiraz has a bright crimson hue that is lively and deep. The aromas are of cassis, boysenberry and blueberry jam with clove and pepper characters adding complexity, along with subtle hints of mocha and tobacco notes. The palate is full and rich showing ripe dark berry fruit, which has integrated well with some superb silky tannin's. Cocoa and mocha oak flavours follow through on the palate, complimenting the berry fruit.

Technical:

Good winter and early spring rainfall provided the vines with some much needed deep soil moisture. Strong winds during flowering and sporadic frosts caused yields to be slightly reduced. A hot summer was tempered by reliable and welcome cooling breezes along South Australia’s coast, aiding to maintain some natural acidity in fruit. The 20-30mm of rain that came in late-summer reinvigorated the vines. The cooler weather patterns which followed lead to near perfect ripening conditions. 2014 was a year of very smart whites, fantastic and elegant reds, great fruit flavour with well-balanced alcohol and tannin's. The Cabernet and Shiraz fruit was crushed and static fermented on skins for 7-10 days. The wine was pressed off the skins and underwent predominantly American oak treatment for 6 months prior to final filtering.

"Deep red to brick-red colour with barely any purple remaining. The bouquet is subdued and shy, but also shows some development, with a touch of blackberry and black olive. The wine is deep, concentrated and rich in the mouth, with abundant tannins, which are starting to soften as they mellow. It has very ripe fruit, but it gets away with it, as it still has some vibrancy on the palate."

"At a RRP of $13 there will be a lot of fans here, the wine itself is not going to win any awards but it’s an honest representation of entry level Australian wine. The nose melds ripe fruits with some earthen and leathery notes with the wines 14.9% alcohol also on show. The palate has some ripe plum and blackberry fruit that is kept in line by drying but not overbearing tannin's and a lick of oak that gives sweetness and another layer to the tannin profile."

"Dark, garnet-hued ruby-red colour, a little lighter on the rim. The bouquet is full and broad with aromas of ripe, savoury curranty fruit entwined with earthy elements, unveiling dark plums and nutty elements. This is solid and densely packed. Full-bodied, the palate is restrained in flavour, with light ripe, savoury red berry and curranty notes, with plums and earth. A little savoury detail unfolds from the rounded and dense core. This has weight and presence along with vinosity, the extraction soft and accessible. The wine carries to a light, shy, lingering finish. This Cabernet/Shiraz is restrained in flavour, but shows savoury, earthy currant and plum notes on an accessible palate with weight. Match with casseroles and slow-cooked game meats over the next 2-3 years. A blend of South Australian Cabernet Sauvignon and Shiraz, fermented to 14.9% alc., the wine aged 6 months in seasoned French oak"
