Berton Vineyards Foundstone Merlot 2021

This Merlot has a deep youthful colour, with expressive aromas of plums, blackberries and violet. The palate has a velvety texture with generous flavours of sour cherries, plums and fragrant herbs with a hint of vanillin oak.


1888 O'Keefe Trail Heathcote Shiraz 2018

Inky black with dusty red hue. Liquorice, black cherries and pepper and spice. Some vanilla oak and earth characters are also evident. The palate has rich liquorice and black cherry flavours with notes of blackberry, vanillin oak and pepper and spice following up. The fine-grained tannins provide wonderful length and a framework for the long finish.

The Lindern Estate Cabernet Sauvignon was crafted with minimal intervention in the winery to ensure it reflects the spirit of the season and vineyard.  Layered with rich generous plum and berry flavours. 


Niche Shiraz 2020

Deep purple with pretty crimson red colour around the edge. Ripe sweet blackberry with touches of cherry and plum backed up by the slightest touch of vanilla oak. There are lifted aromas of plums and black cherries with hints of violets. Some pepper and spice add complexity along with subtle oak character.


Songlines Estates Leylines Shiraz 2020

Beautiful purple with ruby red rim. Vibrant and youthful but very approachable highlighted by black and red fruits, with aromas of fresh plum, blackberry and cherry with hints of raspberry and mulberry making their way through. Fresh fruit forward style making it ideal in its youth, freshly cut plum, cherry and raspberry give initial palate depth while silky tannins and a kiss of oak give length and drive.


Jack In A Box Bendigo Cabernet Sauvignon 2019
Deep dark centre with ruby red edge. Lifted bouquet of dark fruits and berries along with cassis and aniseed. Rich red showing varietal and regional characteristics. Opulent mid palate again a fruit driven style with some flavours of black currant, plum, cassis and spice all featuring.


Conquest Coonawarra Cabernet Sauvignon 2018
Deep brick red hues. The palate has upfront fruit with plum and black currant being the dominant characters. There’s a hint of mint, toasty tannins and a lingering oak finish. Vintage Coonawarra Cab with cherries, plum and black currant.


Technical:

Berton Vineyards Foundstone Merlot 2021

Our local reds began coming in on 17th March, rather late compared to the past 8-10 years. With the lateness of the vintage, growers found it hard to reach the desired sugar specifications however with the cooler conditions looming, the decision was made to pick on fruit and seed ripeness on a parcel by parcel basis, ensuring the best possible quality was maintained. Fermented in stainless steel vertical fermenters for 4-6 days at temperatures between 27C and 29C on french untoasted& toasted oak chips. Wine was then pressed at 1 baume via screw press into stainless steel storage tanks and left to ferment until dry, then racked into stainless steel storage vessel with French oak staves and cultured malolactic bacteria. Once secondary fermentation was complete the wine was clarified via centrifuge into stainless steel storage.


1888 O'Keefe Trail Heathcote Shiraz 2018

Pioneer Andrew O'Keefe migrated to Victoria's goldfields from Ireland, finding his fortune in unique iron railways and bridges. In 1888 O'Keefe's own locomotive pulled the very first passenger train from Sandhurst to Heathcote. The Heathcote line originally ran passenger series as well as transporting local supplies to the gold mines in Bendigo. Our wine is a tribute to the many early pioneers who built the historic railways and helped to unite Australia's many township and people.

Sourced from a single vineyard just outside the township of Heathcote bordering the O’Keefe Rail Trail. The vineyards aspect is northeast facing with a gentle sloping contour in the world renowned ancient Cambrian soils. Fruit was machine picked and de-stemmed prior to crushing and fermentation with 20% whole punch. We used a combination of new and old American and French oak to develop flavour in line with fruit concentration.


Niche Shiraz 2020

The fruit was picked in the cool of night then fermented on skins in static potters and rotary fermenters for a period of six days to retain as much of the luscious natural fruit flavour as possible. Warm temperatures at the early stages of fermentation along with three days of post ferment maceration helped develop soft, round, fleshy fruit and tannins while helping to build structure. Following the pressing process, clarification and final blending the fruit was matured with select parcels having contact with old French oak.


Songlines Estates Leylines Shiraz 2020
“Songlines” are invisible pathways which criss cross the land all over Australia and stretch across continents and ages. The exceptional wine is named Songlines as it perfectly encapsulates the importance of the land, people and knowledge learned over time and across continents.
Leylines is made with the same meticulous care and attention as Songlines and Bylines but with a smaller price tag. The grapes come from vineyards a little younger than Songlines and Bylines and the fruit has been specifically hand chosen for its approachability as a young wine. 2018 saw the selection of some older material as part of the final blend to add some more complex character and add longevity. The winemaking uses warmer ferments in traditional open fermenters with hand “piage” 4 times each day to soften the palate, and the use of older barrels to impart less oak dominance. The wine is matured for 12 months in older French barrels to provide softer rounder oak character.


Conquest Coonawarra Cabernet Sauvignon 2018
Select parcels of fruit were sourced from the iconic terra rossa soils of Coonawarra for this wine. We picked the fruit at optimum ripeness in the cool of the night in order to retain the fruits natural acidity and of course the regional flavours and aromatics that the Coonawarra is world famous for. The wine was transferred to the winery where it was hand reared with extended time on skins. Hand plunging, cool preferment maceration and the use of select yeast, coupled with long post ferment maceration on skins followed the traditional techniques more often used in French winemaking. The wine was aged in new and old oak then select barrels were chosen for the final blend prior to bottling.
