Sourced from hand-tended, cool-climate Adelaide Hills vineyards, grapes are hand-harvested at peak ripeness and immediately chilled for whole-bunch pressing to preserve delicacy and freshness.
On the nose, this elegant sparkling delivers layered aromas of cashew, honeycomb, and citrus zest. The palate follows with creamy complexity, showcasing Pinot Noir-driven wild strawberry notes and the buttery stone fruit richness of Chardonnay. "Amazingly this is a Traditional Method wine that's spent a minimum of 18 months on lees, its cuvée 64% pinot noir, 35% chardonnay and a 1% of “other” variety. Its dosage is 10g/L and it shows with a sweeter fruit sense, though a slight tonic bitterness in the finish cuts that, and a bit of length as well."

"Light yellow; strange marzipan and macaroon bouquet: an odd lees character? Some oak suspected. An odd wine: the palate is light and youthful, soft and dry, with decent balance. The oak/lees/sulfide thing is off-putting. Fairly dry finish completes what is, on palate, a pleasant drinking bubbly.

"A new line from Petaluma. I tasted it alongside a raft of other sparkling wines and Champagne…. Rich peach fruit with strawberry accents and some biscuit – slight flor yeast character wafting about. It has strong vigorous bubbles and a roundness in the mouth – lot’s of fruit and flavour, not so much finesse. Solid sort of sparkling although not the best value."
