The Rolf Binder Bull’s Blood Barossa Valley Shiraz Mataro 2020 is an exceptional blend that exemplifies the Barossa Valley’s rich winemaking tradition. Rolf Binder Winery has been crafting this iconic wine for over 50 years, with each release being a testament to the region's complexity and intensity. This blend, unlike the Hungarian ‘Bikaver’, combines two of the Barossa’s finest varieties: Shiraz and Mataro. To elevate the wine’s intensity and complexity, Mataro pressings from the historic Chri-Ro estate’s bush vine Mataro, planted in the 1880s, are incorporated into the blend. This rare and special fruit is complemented by premium Shiraz from the estate, including some of the esteemed Hanisch Shiraz barrels.
The 2020 Bull’s Blood opens with intense aromas of spice, red berry fruits, and chocolate, with deeper earthy undertones giving the wine an added layer of complexity. On the palate, it is full-bodied yet perfectly balanced, delivering rich, concentrated fruit flavours with well-integrated tannins. This wine can be enjoyed immediately (better with aeration), but it will also reward careful cellaring for up to 10 years.
This is a classic Barossa wine that pairs wonderfully with rich lamb or beef braises, highlighting the wine’s structure and depth.

"I remember going to the Rolf Binder cellar door for the first time and asking to taste the Bulls Blood. Mrs Binder looked at me through squinty eyes and said, "Are you going to buy anything?" I loved that. I ended up doing vintage there in 2005, and Mrs Binder made the best Hungarian goulash for the cellar hands, but she had attitude – just like the wine. Deeply coloured and packed with black cherry, blueberry and macerated plum fruits. Oodles of spice, dark chocolate, vanillin oak, nutmeg, olive tapenade and earth. Toothsome with a mildly broody edge, savoury palate shape, fine grained tannins and a plume of spiced black cherry fruits on the finish."
