Deep dark black and maroon. Loads of sweet spice, blackberry fruit and chocolate. Rich and full-bodied, fresh fruits, plum and blackberryflavoured juice with the right amount of oak and layers of spice and pepper. The different layers of flavour give tremendous length. Beautiful tannins and fresh acidity to finish work harmoniously with the well-integrated oak.
Sourced from a single vineyard with vines aging from 34-64 years of age located on the southern slopes of McLaren Vale. The wine was fermented in two parts one part of the blend was fermented in small top fermenters whilst another was fermented in barrel to allow a more integrated oak profile and ensure the natural fruit flavours were paramount. To complete the maturation process the wine went into seasoned hogshead barrels with a small percentage of new oak for a period of 14 months. This enabled the use of a majority of French oak which we feel gives a more delicate influence whilst a small amount of American oak was allowed to slowly infiltrate the highly concentrated fruit flavour creating a well balanced yet complex tannin structure that ensures a wonderful mouth feel. Drinking magnificently now, but will reward 4-6 years cellaring and should drink well for up to 8-10 years.
