The wine is medium in length and intensity.
Normans Holbrooks Road Sauvignon Blanc 2018
Harvested at the cool of night earlier in the season than usual due to the drier ripening season. We crushed the fruit quickly to separate the clear juice from the skins. We used specific yeast for Sauvignon Blanc and after a cool fermentation the wine was carefully filtered and bottled as soon as possible to retain all the appealing fruit flavours. Made to drink upon release while the fruit flavour is at its most fresh and vibrant.
1838 Reserve Sauvignon Blanc 2018
Sourced from vineyards across South Australia. Harvested at the cool of night before being transported to the winery then we crushed the fruit quickly to separate the clear juice from the skins. We used specific yeast for Sauvignon Blanc and after a cool fermentation the wine was carefully filtered and bottled to retain all the appealing fruit flavours.
Berton Vineyards Foundstone Sauvignon Blanc 2018
In the vineyard a warm dry summer provided a clean and disease free vintage with great ripening conditions across all regions. Despite some hot days, extended heat waves didn’t play a role through the growing season with little berry shrivel occurrence in white varieties. No rain during harvest meant we were able to pick our whites at optimal baume and fruit ripeness.
The Sauvignon Blanc was harvested in the cool of the night, and crushed, destemmed, chilled and pressed immediately. The resultant juice from pressing is clarified before a slow fermentation at cool temperatures of 14 – 16C using a carefully selected yeast to optimise varietal expression. The cooler temperatures help to retain the fresh and light Sauvignon Blanc aromas and flavours. After fermentation the wine is filtered and blended for bottling as quickly as possible to maintain freshness.
Mawson's Limestone Coast Sauvignon Blanc 2017
Our Wrattonbully vineyard plantings of Sauvignon Blanc are extensive. This bounty allows excellent fruit choice and only the best grapes are selected for Mawson’s Cape Denison Sauvignon Blanc. Vineyard selection, combined with using only the free drained juice without the pressings, gives very fine, intense fruit flavours. After fermentation the wine was left on light lees until blending, allowing it to build complexity and palate weight.
The fruit for Mawson’s Cape Denison Sauvignon Blanc is grown on the deeper loam and clay soils of our vineyards in the Limestone Coast region. The more fertile soils encourage vigorous growth creating cool shaded fruit that preserves the intense flavours of this variety.
Watershed The Farm Margaret River Sauvignon Blanc Semillon 2018

Giant Sky Marlborough Sauvignon Blanc 2016
Summer started early in Marlborough, with the warm weather leading to varietal flavours, however temperatures cooled through summer into harvest which slowed down the ripening. Whilst extending the vintage this cool weather has resulted in wines with fine and intense fruit flavours.
The fruit is picked at night and in the cool of the morning to ensure we retain absolute freshness. Using techniques of partial skin contact and aromatic yeast fermentation we ensure that we are able to best reflect and preserve the flavours and aromas grown in the vineyard.
Fruit is sourced from a variety of growers around Marlborough; this region is regarded as perfect for growing Sauvignon Blanc with distinctly varietal aromas, lovely crisp acid, freshness and vibrancy.
