Tasting Notes:

Pale straw with a vibrant green hue. Delicate lemon and snow pea with hints of apple blossom. A focused palate of lime juice and lemongrass with mouth-watering acidity. This pure, zesty wine is an excellent example of Hunter Semillon with freshness and structure that will ensure the 2013 Shepherd’s White will age gracefully for many years to come.

Technical:

The generous winter rains and a gentle cool dry spring encouraged the aged Semillon vines to produce grapes of a complex ripeness profile. Dry and warm weather in the lead up to vintage provided ideal conditions for the crafting of a Semillon wine with great intensity of flavour. 

Several vineyard assessments in early January preceded the harvest to ensure the gradually ripening grapes reached the desired varietal flavour and structural balance. The fruit was handpicked, pressed immediately on arrival in the winery and allowed to cold settle for 48 hours. The juice was then racked, warmed and inoculated with a neutral yeast strain. Cool temperatures were maintained throughout to retain the delicate aroma and flavours of this wine. At the completion of fermentation the wine remained on light lees for 3 months in stainless steel tanks with blending, stabilisation and filtration prior to bottling.
