Tasting Notes:

A lively nose of concentrated stone fruits and hints of delicate oak on the palate. This eloquent, cool climate wine offers length and finesses with a persistent zesty finish.

Technical:

Apex represents Nepenthe’s dedication to regional excellence by providing a unique single clone, single site, a single vintage snapshot in every bottle. Underpinned by craftsmanship and provenance, minimal intervention winemaking allows the nuances of site and clonal complexities to be highlighted while maximising varietal purity.

The fruit was pressed and then transferred to new fine-grained French oak and fermented with two yeast strains to increase complexity. After fermentation, the wine was batonnaged (less stirred) for 3 months before allowing it to mature for a further 10 months. The wines were then clarified and bottled and allowed to settle in the bottle before being released.
