Light straw with green edge. Bright and complex with citrus notes and a lovely creamy texture from partial barrel fermentation. This is as clean as a whistle yet still has a minerally character and is textural without showing off, it has great fruit sweetness and creaminess although somehow seems quite dry.
Fruit is selected from estate vineyards only from cool climate regions across South Australia. Grapes are both whole bunch pressed as well as crushed to give a range of phenolics for complexity and texture. The juice is allowed to ferment naturally in new and used French oak casks. Lees are stirred intermittently until final assembling of the blend. The wine is bottle young to retain the concentrated fruit flavour and allow the subtle oak complexity to slowly develop overtime not dominate in anyway.
