Tasting Notes:

Deep dark crimson. A luscious bouquet with vibrant plum and black berry fruit aromas with underlying complexity derived from the use of oak. On the palate the wine shows vibrant mouth-filling fruit with cherry and plum, good length, a touch of wood and a soft full finish.


Technical:

The fruit was picked in the cool of night then fermented on skins in static potters and rotary fermenters to retain as much of the natural fruit flavour as possible. Warm temperatures at the early stages of fermentation along with post ferment maceration helped develop soft fleshy fruit with well-balanced acid and tannins while helping build structure. Following the pressing process, clarification and final blending the fruit was matured with French and American oak.
