The Yalumba The Signature Cabernet Shiraz 2021 is a stunning expression of Barossa Valley terroir, crafted with a blend of Cabernet Sauvignon and Shiraz that showcases the depth, richness, and complexity the region is known for. The 2021 vintage was marked by late winter and spring rains, which provided the vines with sufficient moisture, leading to great balance between the crop and canopy. The mild to warm summer, coupled with cool nights, allowed for the development of exceptional aromatics and varietal flavors.
The Cabernet Sauvignon grapes were sourced from three distinct vineyards in the Barossa Valley, adding layers of rich, lifted aromatics and structure to the wine. The Shiraz comes from vineyards of varying ages, including blocks planted as early as 1925. These blocks are planted in sandy loam soils, with yellow sand and ochre clay over red clay, resulting in a wine with sweetness, fullness, and remarkable complexity.
The wine presents a beautiful deep red color and is perfumed with seductive floral notes, red licorice, blackcurrant, and dark cherry aromas. On the palate, the wine is delightfully refined, with generous dark red cherry fruit that seamlessly merges into ironstone tannins. This is a full-bodied wine that exudes balance, style, and defined fruit characteristics, complemented by a long, lingering tannin profile. It is an elegant, powerful wine that embodies the best of the Barossa Valley.
