The colour is dark red with youthful purple tints evident. Perfumed with dark cherry, coco and spice, subtle oak sweetness addslift and complexity. The palate is finely structured with ripe dusty tannins and red berry fruits. A tobacco savouriness that adds depth and complexity while the acid maintains freshness and adds brightness in the wine.
Dr Peter McMahon planted his very first grapevines at Seville Estate in the year 1972, marking the restoration of Yarra Valley as a premium wine region of Australia. With the launch of its first vintage, Seville Estate strengthened its position as one of the finest wine producers of Yarra Valley. Even today, the team at Seville follows Dr Peter’s values, paying great attention to viticulture as well as winemaking processes.

"Fabulous, graceful Cabernet Sauvignon. Redcurrant, raspberry, flowers, aniseed, tobacco earthiness packed deep into a medium-bodied frame. Acidity is pure and fresh, tannin is light but sure, it feels ‘minerally’, and the length is terrific. In short, it’s Yarra Cabernet wearing its best suit (or dress)."

"Good colour, bright and fresh, with aromas of ripe red fruits and a faint suggestion of volatility, which is not a problem. It's medium to full-bodied and quite firm, with abundant tannins and very solid structure. It's tight, tense and has potential. A stylish wine. I'd cellar it a while."
