Tasting Notes:

Squid ink blackness. A brooding dark amalgam of black pudding, sweetbreads and marrow. Confirmed: no mention of (ferric) haemoglobin. Promise. A brisk swirl of the glass reveals scents of nori, oyster/blackbean sauce and iodine. A concession of varietal alignment – cabernet florals, blackcurrant and black mulberry. Complexingly, a suggestion of beurre noisette sauce – avec sage. Detection of a 100% new oak footprint? Maybe, if you really try … swamped by an overload of background ‘aromatic noise’? Expansive. Even. Expressive. Engaging. Enigmatic. Svelte tannins. Please explain – a compacted felt texture (dense/firm/softened/malleable). Be warned – senses led astray – ambushed by tannins, seduced by generosity and power, waylaid by luxurious fruits and balance. Innocence lost. Oak, as per nose, completely ingested. Flavours - where to start? Above descriptors on nose, convey to palate. Organoleptically as one. Implores secured time in bottle – for so many reasons. No. 1 – heightened hedonistic drinking enjoyment over time.

Technical:

Needs time to unravel – much more to be revealed. As it reluctantly unfurls we’re now cognisant that it’s barely the start of this wine’s journey. 20 months in new American oak hogsheads.

Accolades & Awards:

100 Points - Andrew Caillard MW

"Deep colour. Massively concentrated blockbuster wine with intense blackcurrant, praline, mocha aromas with paneforte, aniseed notes. Plush, richly flavoured palate with dense blackcurrant, dried plum, paneforte flavours, fine plentiful grainy slightly al dente tannins, astonishing mid-palate richness and mocha, sweet malty oak notes. Generous, multi-layered and complex with impressive vim and vigour. Finishes firm and tight with a dense plume of fine tannins. This has a long way to go before it reaches drinking age. Amazing density, dimension, extract and impact. Put away for ten years to unfold at least. A classic and monumental Bin 707; a Grange Cabernet!"

98 Points -  Joe Czerwinski Robert Parker's Wine Advocate

"Aged in American oak, the 2016 Cabernet Sauvignon Bin 707 stands out for its bold aromas of vanilla, tobacco and cassis. This year, it's close to 40% each from Coonawarra and McLaren Vale, with smaller proportions from Barossa Valley and the Adelaide Hills. It's full-bodied and rich, with a velvety mouthfeel, great intensity and super length. Yes, it's embryonic, but it's not unapproachable, much like any other high-quality New World Cabernet these days, with the ability to age for two decades or more."

97 Points - Campbell Mattinson

Cabernet sauvignon from Coonawarra, McLaren Vale, Barossa Valley and the Adelaide Hills. 20 months in new American oak. Okay. All the Penfolds wines taste and smell the same but this tastes and smells different. There goes that theory. Orange liqueur, blackcurrant, choc mint, peanut brittle. It’s big, powerful and sleek; you could fly to London in this. It has the tannin handshake of a hero and such bulging arms of fruit that they’d do a gaol gym rat proud. Of all the wines tasted on the day this was the one I drained the most; my lips were locked to the rim. It wasn’t me, it was the wine. It’s compelling. Iron fists always are.

96 Points Tyson Stelzer

"2016 is a commanding season for Bin 707, building considerable presence thanks to the combination of a warm start to summer and mild, slow ripening thereafter. The result delivers layers of crunchy, tangy black- and red currant fruit of impressive concentration and focus, met squarely with firm American oak, serving to stifle the precision of fruit a little at the moment, but promising to release it given sufficient time. As ever, it screams out for decades in the cellar."

95 Points Huon Hooke

"Deep, dark red colour with a good tint of purple. The bouquet is relatively fruit-driven for a Bin 707, showing clearly defined cassis and sweetly ripe blackberry aromas, and a hint of green bean. An immaculate wine, still strongly built and with big structure, but seems less oaky than earlier, more traditional vintages. Indeed, it's a more elegant Bin 707, perhaps without the prodigious length I associate with this wine. The aftertaste still carries the typical mouth-puckering tannin, though."

95 Points - Decanter

92 Points - James Halliday Wine Companion

"From Coonawarra, McLaren Vale, Barossa Valley and Adelaide Hills, matured for 20 months in new American hogsheads. Full-bodied, arrogant, rambunctious, stares you down. Difficult to cram more flavour into a glass. Demands 5+ years to allow a proper judgement."
