Tasting Notes:

80% Cabernet Franc 2012 from eastern Barossa foothills together with 20% of Grand Merlot 2012 from our thirty year old Eden Valley Vineyard – Springhill. Both wines came from fully ripened (15 baume) grapes and so show great richness and huge depth of flavor. The open structured tannins are abundant and soft, with an excellent dry finish. The varietal Cabernet Franc is clearly expressed while the Grand Merlot offers the balancing fruit. A wine of distinction, style and harmony fitting into the deluxe category.

Technical:

For many decades the classical Cabernet Franc wines of Europe have been held in high regard by knowledgeable wine consumers. In Australia little attention to Cabernet Franc has been given by winemakers, with just a few exceptions. Amongst these are some excellent wines showing the violet perfume of the variety so well known elsewhere, and now Irvine presents a deluxe style of this classic variety. As in Europe, the Irvine style is based on a blend of Cabernet Franc and Grand Merlot, with the proportions of each varying each year according to the vintage conditions. Maturation in new Centre-of-France oak barrels for fifteen months. Cork sealed for this classic wine, while the bottle itself is of an old broad shouldered Bordeaux design – again classic in its own way.
