Tasting Notes:

The Don't Tell Gary Shiraz is a beautiful dark garnet colour with black cherry, blueberry and mixed spice on the nose. Hints of pepper and soft oak spice are beautifully integrated with blackberry fruits and medium bodied silky tannins.

Technical:

This wine is a labour of love – one the accountants didn’t know about. In 2014, winemaker Jo Nash discovered an exceptional parcel of Shiraz from the Grampians which she gently crushed, then tucked away in some ridiculously expensive French oak barrels to age for 12 months. The wine speaks for itself – minimal intervention, purity of fruit, Shiraz at its best.

The wine was made with 100% Grampians shiraz matured in ‘ridiculously' expensive French oak, and speaks clearly of its variety and its place. It's well worth cellaring if you can keep your hands off it.

Fragrant black fruit aromas with slight menthol-like characters. Lovely and rich and chewy in the mouth with typical cool climate fruit flavours. “Has style and class.”


4 Stars Cuisine Wine 

Gary, the GM of McPherson wines, was reputably not informed of this project by the winemaking team. The clandestine Grampian fruit has been crafted into a compelling and concentrated Shiraz with raspberry jam aromas and a core of dark cherry, sweet vanilla and black pepper benefiting from silky tannins.

Pristine aromas of violets, cassis, blackberry and blueberry backed by faintly smoky, tight-grained oak are lifted by scents of spice and cracked pepper. It’s medium to fullish in weight, long and elegant, with mouth-filling, vivacious fruit of perfect clarity extending over a fine, seductive backbone of crunchy tannins towards a gentle but emphatic finish. An old-fashioned ‘Burgundy’ style from one of the best of all shiraz regions, the Grampians. Incredible value.
