Dark, deep garnet in colour with deep purple hues. Intense aromas of blackberry, dark cherry and ripe plum dominate the more subtle spices and dried herbs that become more complex as the wine opens after several hours. Juicy plum and dark fruits on the palate are courtesy of a low yielding, long growing season. Tannins are bold and round, balanced with fine natural acidity and a long finish of blue fruits and five spice.
Small batches of Pinot Noir were selected from sites in our own vineyards at Pipers River and Coal River Valley. Each site and block has different clones and terroir, adding their own strengths and complexity to the final blend. The cooler northern maritime location at Pipers River produces Pinot noir that is focused and structured, while the Coal River Valley is naturally deeper in colour and concentration of fruit with fine acidity.
Each of the parcels were picked based on their merit. Fermentation started after two to three days and continued for four to five days, with up to five percent whole bunches. The cap was plunged twice a day to extract colour and tannin from the skins. The wine was then pressed and settled before before being placed into French oak barriques (22% new) for 11 months, where malolactic fermentation took place prior to filtration and bottling.

“ While Dalrymple’s original vineyards are located up at Pipers River near Bass Strait, Peter Caldwell also includes some Coal River Valley fruit for this wine, which no doubt gives some richness to the delicate Pipers style. It’s a very good fit which has turned out a wine with broad appeal for all Pinot fans.
Mid cherry in colour, this is a generous and up front style with lovely purity of dark cherry fruit, plus attractive layers of sappy and spicy notes. The palate is then fleshy with plenty of stalky herbal complexity over sour cherry flavours. It’s supple and quite soft so best enjoyed soonish with a liberal serve of vegetable spring rolls.”

“ Medium to deep red/purple colour, bright and youthful. The bouquet is meaty, spicy, gently herbal with some greener tinges, with a lot of savoury notes. The palate is light to medium-bodied and underlined by a subtle thread of firm tannin, while the flavours are bright and quite intense, youthfully tight and firm with a light but positive grip. Good now but it will drink even better next year.”
