Tasting Notes:

A true delight to consume, The Ledge Shiraz features a deep plum colour with purple hues highlighting the edges. The attractive bouquet exhibits scintillating aromas of blackcurrant, ripe plum and raspberry coulis. These fragrances, supported by oak spice, black pepper, vanilla and dried herb notes, make way for a rich and intense palate. Bright, natural acidity combines with firm tannins to offer an exceptional structure to the drink. The finish is lengthy and persistent. You may enjoy it with beef eye fillet roast beetroot, or celeriac purée.

Technical:

Harvested at optimal maturity the grapes were destemmed and crushed into small open fermenters, cool soaked for 2 x days before beginning fermentation with 1 x plunge per day. During fermentation the must was pumped over 2 times daily for peak ferment then plunged twice daily for the last 4 days of the 10 days spent on skins. The free run and pressings were separated and drained directly to barrels to complete primary ferment in oak followed by Malolactic fermentation. Aged and matured on lees in 100% French oak Hogs Heads for 18 months prior to bottling.

"There's a green-edge to the tannins across the '17 Adelaide Hills wines and this hasn't escaped it. But has coped better as there's a good fruit profile of red berries with a fair dunking in wintergreen and mint. It's medium-bodied with sinewy tannins and some tartness but a freshness too. "
