Tasting Notes:

Deep dark plum red with a slight purple hue. Aromas of ripe plums, blackcurrant and dark cherries with a spicy cinnamon and baking spice overlay. Underlying tones of vanilla and mocha give lift to the nose. The palate is rich, with dominant blackcurrant and hints of dark plum, blackberry and dark chocolate with subtle violet floral lift. Good balanced acidity and smooth velvety tannins complement the spicy backbone of supporting oak giving additional complexity. An underlying savoury spice character is complimented by primary fruit characters with generous length and weight on the finish.

Technical:

Fruit for the Pilot Block Shiraz was selected from premium vineyards in the heart of the Langhorne Creek wine region. Harvested in the early hours of the morning by Machine and destemmed only. Fermentation on skins for eight days has allowed excellent structure and colour to be extracted while preserving the floral lift of the wine. The wine was matured in a combination of french oak and stainless steel for twelve months giving it an extra dimension in both flavor and structure. The wine is ideal to drink now, but will also benefit from and gain further complexity with short term cellaring.
