Wicks Estate Tom & Mitch Adelaide Hills Sauvignon Blanc 2016

In a relatively short time the fruit sourced from our two vineyards in Woodside and Llangibby have produced a consistent house style of Sauvignon Blanc synonymous with the Adelaide Hills. Wines that are extremely well regarded and highly awarded in all National and International major wine shows. Harvest was staggered to enable a range of fruit ripeness and a full spectrum of fruit flavours.  Once in the winery, all parcels were vinified separately, allowing us to trial a number of different yeast strains and give us the maximum flexibility when it came time for assembling the multi-faceted blend.

Bitch Sauvignon Blanc 2016

Harvested at the cool of night before the extreme heat wave that occurred late in the ripening season. Crushed and chilled, the fruit is allowed skin contact in press for 3 to 4 hours for maximum flavour extraction. Cool fermentation in stainless steel tank to dryness; 6 weeks on light lees with regular stirring several times a week; cold settled and racked to bottling. Make to drink upon release while the fruit flavour is at its most fresh and vibrant but will cellar for short term.
