Florals and lemon grass along with citrus and lime perfumes. The palate is complex with almond and honeysuckle notes as well as buttery textures whilst it provides a tangy long line of acidity and cleansing finish.
The Derek Victorian Shiraz 2021
Deep purple to black colour. Intense and vibrant aroma of dark fruit and spice, beautifully varietal with ripe plum and blackberry with well integrated oak and chocolate hints coming through. The palate is fruit driven with dark fruit being the overwhelming hero here while oak and smooth tannins all working in unison. The complexity is derived from some spicy character whilst the finish is backed by a great acid back bone and the tannin structure will ensure the wine continues to drink well over the medium term.
Bull In A China Shop Shiraz 2018
The palate is the highlight of the wine, exhibiting rich and vibrant varietal berry-fruit flavours. This is a full, well-rounded red wine that is smooth, complex and full in flavour. This wine is well suited to cheeses, red meats and even some spicy Asian dishes, or can be sipped on its own.

This Cabernet Sauvignon is rich with plum, nutmeg and blackberry flavours. These are complemented by well integrated earthy nuances and a smooth, persistent finish.
Harmulist South Australian Chardonnay 2022
Flavoursome mouthfuls of citrus and stone fruit are the hosts and blend seamlessly to create a silky rich mid palate which is voluptuous and well rounded. Some subtle hints of freshly cut grass give an interesting side note whilst crisp acidity bounds the palate into a beautiful complex and drinkable wine.

Vibrant crimson with red hue. Aromas of freshly crush black fruit, chocolate and a mild touch of oak and spice. The palate is round and generous. A succulent mid palate shows lovely plum and some cherry flavours with chocolate creating a rounder finish whilst being perfectly interwoven between natural fruit acid and tannin. Some spice ensures a fresh and lively finish.

Normans Old Vine Barossa Valley Semillon 2022
Normans Wines is one of the oldest and most respected family names in Australian winemaking. Since 1853, when Jesse Norman planted his first vines in Adelaide, Normans Wines has developed a reputation for premium award-winning Australian wines. Normans Wines is one of Australia’s founding winemakers.
The vineyard source was a single old vineyard in the Rowland Flat region of the Barossa Valley. Above average rainfall in winter made up for the drier Autumn period leading to full healthy canopies. The vineyard escaped most of the hail event in late October although yields were still lower than the average. Slow ripening due to cooler than average conditions made for a slow drawn-out vintage resulting in wines with higher natural acid and rich colours. We destemmed, settled, and fermented using specific yeasts then allowed to rest on lees for a 3-month period then filtered and bottled to retain as much luscious fruit as possible.
The Derek Victorian Shiraz 2021
Sourced from premium vineyards across the Grampians sub region in Victoria. The fruit was crushed then underwent cold macerating. Fermented in open top fermenters with regular pump over’s to extract both colour and tannin. Following another week of maceration the dry free run is drained to tank. The skins are then pressed and the pressings transferred to the same tank, the wine is then racked with select parcels going into barrel. The wine is aged in older oak hogsheads then bottled after maturation with minimal fining and filtration.
Niche Merlot 2022
The fruit was sourced from premium vineyards located in South Australia. We picked in the cool of night when the fruit had reached its optimum ripeness then fermented on skins in static potters and rotary fermenters for a period of seven days to retain as much of the luscious natural fruit flavour as possible. Warm temperatures at the early stages of fermentation along with ta short period of post ferment maceration helped develop soft fleshy fruit and tannins while helping build structure. Following the pressing process, clarification and final blending the fruit was matured with select parcels having contact with old French oak.
