1838 Reserve Cabernet Sauvignon 2021

Fruit was sourced from several well-known growers in South Australia. The different sites allowed us to pick the fruit over a period of 2 weeks allowing each vineyard to develop differing characters to compliment each other. The result is intensely flavoured wines due to the care and attention these growers give them. This wine was fermented warm and received pump overs on a daily basis during their fermentation. Select parcels of the wine received aging with oak contact to add another level ofcomplexity without over powering the fruit.

Niche Cabernet Sauvignon 2022

The fruit was picked in the cool of night then fermented on skins in static potters and rotary fermenters for a period of six days to create a good balance between extracting the appropriate tannin for wine structure and retaining fruit drive and aromatics. Following the pressing process, clarification and final blending the fruit was matured with select parcels having contact with old French oak.

Wine Men of Gotham is the fully nutured baby of Gotham.The Wine Men of Gotham is homage to the Wise Men of Gotham; an allusion to the reputed simplicity of the villagers of Gotham, England. If tradition is to be believed, the Gothamites were not sovery simple but simply wise enough to play the fool; in a variety of ways they merely acted silly to gain their ends. Wine Men of Gotham reflects the sincerity of the lovable fools of Gotham. South Australia's warmer than average weather in 2014 helped bring about a well-balanced harvest of generous fruit flavours, colour intensity and varietal character.

Normans Holbrooks Road Cabernet Sauvignon 2022

The fruit was picked in the cool of night then fermented on skins in static potters and rotary fermenters for a period of seven days to retain as much of the luscious natural fruit flavour as possible. Warm temperatures at the early stages of fermentation along with three days of post ferment maceration helped develop soft fleshy fruit and tannins while helping build structure. Following the pressing process, clarification and final blending the fruit was matured with select parcels having contact with mature French oak.
