Penfolds Bin 389 South Australia Cabernet Shiraz 2015
Deep dark magenta colour. A first impression of dark fruits and chocolate, splashed by spices – cinnamon, vanillin pod, cola. Then, a transient umami dabble – via cues of Worcestershire sauce/smoked Barossa bacon/beef cube. To follow, a bruléed lift mirrored by scents of toasted brioche, soaked oats. Intriguingly different, yet still Bin 389, albeit young/evolving at this perusal at an early stage. Expansive, explosive, exotic…a Bin 389 triple-ex palate rating! A wave/surge of fruits and spice unleashed – propelled by tomato and tahini paste flavours. Juicy, succulent tannins engulf, alongside oak – adding volume, density. Mouth-coating in every sense. Long and lingering.
Wynns Coonawarra Estate Black Label Old Vines Shiraz 2013
Deep purple, with a bright purple hue. Concentrated notes of dark cherry and blood plums, followed by raspberry, bay leaf and lavender. Dark and focused, filled with juicy and vibrant fruit. Blood plum and magnolia on the mid palate. Sleek, plush tannins frame bright fruit, creating a seamless, layered wine, indicative of its cool-climate home.

Intense and concentrated ruby red colour. Bouquet of ripe red fruit on a spicy background. On the palate it enhances all its freshness with just and balanced tannins accompanied by a long persistence.

Deep red brick with a darker centre. An enticing nose, which features blackcurrant with red fruits with, lifted mint characters typical of Coonawarra Cabernet Sauvignon. There is toasty oak and sweet spice also. The well-structured palate expresses sweet berry fruit and light oak flavours. Ripe dark berries, plum and dusty mulberry characters abound with a hint of regional mint highlighting the lush palate flavours. Fine-grained soft tannins add to the attractive lingering fruit.

Deep opaque red to black in colour with vivid purple hues. Complex bouquet featuring alluring dark chocolate, forest fruits, fleshy plum with underlying earthy nuances, which give the immediate impact of a soft well, structured wine. The palate is voluptuous with a real rich velvety texture expected in top quality Barossa reds from an outstanding vintage. The mid palate is an assortment of Christmas pudding, black olives, freshly cut plum, oak and earth. A true reflection of Barossa Shiraz from a great vintage and it finishes with some classically fine Cabernet tannins, which linger and draw you into this seamless classic Australian blend.

Deep purple in colour with red rim. Cherries, strawberries and some savory spice notes. Fresh and vibrant there is intoxicating fresh cherry flavour with strawberries and more complexity is derived from spice and very subtle oak, the tannins are quite dry but only an on looker as the freshly cut fruit is the over whelming driving force. Served best with Roast pork herbs and fennel with apple sauce or mild blue cheese.

Sensations of exceptional richness, this wine reveals itself as dense and full-bodied as the essence of morello cherry pulp, blackberry and grape. Not only the concentration reveals the sublime but even the taste is soft and supple very admirable and harmonious, with tannins that curb and drains but are not bitter. A limpid wine, well calibrated and clear with nuances of pure frosting spice, the fruit evokes pulpy exceptional expressive power.

Ripa Di Sotto Rosso Cuvee Nv
In the glass is a rounded, harmonious, concentrated red wine with a dark color and a fragrance reminiscent of cocoa, delicate spices, nuances of vanilla and leather. The taste is full-bodied on the palate, and with a syrupy texture this intense red wine unfolds with an open fruity bouquet supported by a mellow tannin structure and well-balanced acidity in the background. The finish lingers long, with fruity reminders of plums and dark berries.
Penfolds Bin 389 South Australia Cabernet Shiraz 2015
Bin 389 is often referred to as ‘Baby Grange’, in part because components of the wine are matured in the same barrels that held the previous vintage of Grange. First made in 1960, by the legendary Max Schubert, this was the wine that helped to forge Penfolds solid reputation with red wine drinkers combining the structure of Cabernet Sauvignon with the richness of Shiraz. Bin 389 also exemplifies the judicious balance of fruit and oak.
After a dry South Australian winter reminiscent of 2006, vines were in water deficit at the beginning of spring and became accustomed to dry conditions quite early. Early budburst was noticeable across many regions and windy conditions during flowering were, in some regions, responsible for variable fruit set and lower than average yields come vintage. Dry spring conditions explained canopy growth and low yields, becoming typical of the 2013 growing season. Warm days were dispersed throughout October, November and in early January, contributing to an early start to the 2013 harvest and a short, condensed vintage. Dry and warm conditions, coupled with lower than average yields resulted in fruit showing strong, structural tannins and wines of great intensity and encouraging flavour.

Wynns Coonawarra Estate Black Label Old Vines Shiraz 2013
Shiraz (formerly known as ‘Hermitage’) is an important part of Coonawarra’s history. The acknowledged reputation of Coonawarra for age-worthy wines has largely centered on Cabernet Sauvignon and Cabernet Sauvignon Shiraz blends. However the very early history (in the 1890s) centred on other varieties – particularly Shiraz.
Today Wynns is privileged to hold Shiraz vineyards on many prime locations within Coonawarra. Vines for this label are between 30 and 110 years old. Wynns ‘Black Label’ Shiraz is a superb example of Coonawarra’s cool climate style. Displaying great fruit character, this wine has rich and complex flavours of red berries, spice and chocolate with layered fruit underpinned by tightly- focused tannins.
Enjoy on release, or cellar carefully for five to 12 years.
Riolite Vini Sangiovese Nero d'Avola e Corvina The Blend
From a selection of the best grapes harvested between the first and third week of October, carefully de- stemmed are vinified in modern stainless steel tanks, with maceration on the skins for an average duration of 15-18 days at a temperature of about 26 ° centigrade. Once the alcoholic fermentation is complete, the wine carries out the malolactic fermentation. After 6 months of aging the blend is made between the three grapes and the bottling.

Fruit was harvested at optimum ripeness from a vineyard I hand selected due to extensive experience with as I have hand crafted many Gold and Trophy winning wines from this area. Following on from picking we crushed the fruit and allowed fermentation with whole berries to enable high levels of natural fruit and acid to combine perfectly which also developed a lovely backbone of tannin. The wine was matured in both new and old oak over an extended period of 2 years then the wine cellar stacked prior to being labeled for release.
The Colonial Estate InExile Barossa Valley Shiraz Cabernet 2016
The fruit for this blend was sourced from two vineyards one old vineyard in the Marananga and the other from the Seppelsfield region just up the road in the Barossa Valley. Both vineyards were severely pruned and as a result of this and minimal water they produced just one and a half one to the acre. The grapes were all hand picked and a small selection from the most western edge of the Shiraz block and a small selection from the dead centre of the Cabernet block were isolated by the winemaker and vigneron as they had such outstanding quality. The grapes were transported to the winery in the early hours of the morning to avoid the summer heat where they were again sorted then de-stemmed and crushed before being co-fermented in large wooden vats after extreme cold maceration. The wine had their malolactic in new French oak, and is thereafter in the same oak although a small parcel went into two new French barrels for aging. The best barrels were then selected after 24 months in oak to be used in the final blend and bottled with minimal filtration. In the winery the final barrels used were isolated from all other wines and we considered them to be inexile and hence the name was born.

The fruit was hand picked and de-stemmed allowing for the retention of whole berries that were open fermented in small vats. The inclusion of whole bunches aided the development of structure and spice in the wine. Minimal maceration during fermentation, which enabled us to produce a more elegant wine style. The wine was matured in French barriqes for 9 months to add complexity and length.

From a selection of grapes of the company, the grapes are de-stemmed carefully vinified in modern stainless steel tanks with maceration on the skins for an average duration of 25-30 days at a temperature of about 26 ° Celsius. In late December the “Tuscan Governo” method begins, by slowly re-fermenting the wine with Sangiovese grapes left to dry in a loft at controlled humidity and temperature. It then ages in oak barrels for about 6 months and further bottle ageing for about 3 months.

Corte Al Passo Sangiovese Merlot IGT Toscana 2016
The Nistri family are Sangiovese specialists and Corte Al Passo is a wine made in the ancient 'Governo’ style; meaning that a small proportion of the grapes are dried before being added to the wine in November - just like Amarone.
Two collections are made; the first occurs in the first week of September, the other in the second decade of October in order to increase the sugars and make a slight overripe.
The grapes are carefully de-stemmed in modern stainless steel tanks, with maceration on the skins for an average duration of 25-30 days at a temperature of about 26 ° C. It ages in second-cycle barriques for 6 months and a further 6- month aging in bottle.
Located at an altitude of 300 meters s.l.m. with south / west exposure. Vineyards of new and old plant with an average density of 5,000 plants per hectare.

This wine was created with a philosophy from which great wines have been made. Taking care in advance to choose the best blending partners, to create an excellent cuvee. Apulia’s warm sun and rich soils are perfect conditions for providing a constant supply of nutrients for the vines and thus optimal conditions for ripening the grapes. The work of cultivating the vineyards was focused on obtaining the best quality, and all processes were based on traditional methods of wine making.

“It’s a wine with a ‘wow’ introduction. It throws beautiful, beautiful aroma. It’s distinguished by it. It’s sweet, pudding-like, like fresh vanilla, like lemon delicious. I went to taste this wine and couldn’t get past the nose; I just wanted to go on enjoying its aromatics. It’s smells every bit Penfolds but every bit itself. The palate is true to established form, with blackcurrant and bay leaf notes rigged to a powerful motor of tannin. Creamy/vanillin oak gets on with business too but again the fruit stares it down. From every angle this is a belter of a Bin 389. It’s best consumed any time between now and the apocalypse, or thereabouts. “
