The La Bise Adelaide Hills Chardonnay 2025 Dozen is a refined expression of cool-climate Chardonnay, crafted with precision, restraint and elegance by acclaimed winemaker Natasha Mooney, widely regarded as one of Australia’s most talented modern winemakers. Sourced from premium vineyard sites in the Oakbank and Piccadilly sub-regions of the Adelaide Hills, this barrel-fermented Chardonnay captures purity of fruit while delivering layered complexity and textural finesse.
Picked early to naturally achieve lower alcohol and heightened freshness, the wine pours a bright straw colour with a subtle honeyed hue. The nose is immediately engaging, offering rich yet refined aromas of toasted nuts, vanilla bean, cinnamon and gentle spice, all arising from high-quality Chardonnay fruit and careful oak maturation. There’s a sense of control and balance here — oak adds depth and intrigue without ever overshadowing the fruit.
On the palate, the wine is finely textured and sophisticated, unfolding with flavours of ripe peach, buttery quince and stone fruit, framed by seamlessly integrated vanilla and spice. The barrel fermentation contributes creaminess and structure, while the cool-climate acidity keeps everything poised and vibrant. The finish is long, polished and quietly powerful, making this a Chardonnay that rewards both immediate enjoyment and short-term cellaring.
The previous vintage earned 91 points from Sam Kim at Wine Orbit, reinforcing the pedigree and consistency of this release. It’s an ideal partner for roast chicken with butter and herbs, pan-seared scallops, grilled prawns, creamy pasta dishes, or soft cheeses, where its texture and freshness elevate every bite.
Presented as a full dozen, this is a compelling option for Chardonnay lovers seeking a premium Adelaide Hills expression that balances richness with restraint — elegant, food-friendly and unmistakably cool climate in style.
