Tasting Notes:

Moderate mousse that dissipates relatively quickly. Pale straw coloured base wine with pale gold edges. Very fine bead showing good persistence. The nose displays scents of pear, brioche, citrus and toast. The palate delivers flavours of pear, baked bread, brioche and toast. Clean crisp dry finish with aftertaste of pear, baked bread and citrus.

Technical:

All the grapes used to make this wine are from organic farming. When the harvests arrive, we press the grapes slowly using our pneumatic wine presses. Only the first presses are used to produce our wines. Malolactic fermentation takes place in our 100% stainless steel vats. Secondary fermentation in the bottle is carried out by adding organic sugar and yeasts. This is followed by 24-36 months of ageing "sur lattes"."
