Tasting Notes:

Dark fruited blackberry and plum along regional black pepper and spice of the Grampians to create an enticing nose with a hint of flinty minerality.

Soft and plush with a fine, medium bodied structure. Blackberry and mulberry fruits marry with complex spice and are supported by fine, velvety tannins and a mineral texture.  


Technical:

Premium parcels of Shiraz from the Grampians and Heathcote regions were fermented on skins, averaging around 7 days and then matured in a combination of 225 L French oak barriques and 450L French oak puncheons for 10 months. Overall 25% new French oak.

"A rich, layered full-bodied shiraz, shrouded in all manner of things black (berry), licorice, plum and spice. Tannins and oak are also contributors. Gauche now, but its Grampians heritage could produce a surprise in a couple of decades."

"Chalambar Shiraz. Made with grapes grown in the Grampians and Heathcote regions.

It shows some alcohol warmth and not a lot of its trademark pepper, especially at first, but as it breathes its charm are slowly revealed. Cherry-plum and clove characters come with gentle drifts of purple flowers and indeed black pepper, the quality not quite emphatic but convincing nonetheless. It’s arguably best consumed young but it has the stuffing to age, should you wish. I was 89-90 at first and then 91-92 after it had been open for a decent period."
