Tasting Notes:

The Fu2 Barossa Valley Cabernet Sauvignon 2021 is bold, confident and unapologetically expressive—very much aware of its pedigree. The cool, mild 2021 growing season delivered superb balance and standout acidity across the valley, widely regarded as the best odd-year since 1991 and described in James Halliday’s Wine Companion as “the best in 30 years.” This exceptional vintage underpins the power and polish that define this striking single-vineyard release.

In the glass, it pours deep crimson with dark garnet edges. The nose is unmistakably Cabernet, bursting with blackcurrant, cassis and dark plum, supported by cedar, graphite and a teasing hint of dark chocolate. The palate is powerful yet impressively composed, delivering waves of dark berry fruit wrapped in fine-grained tannins and perfectly judged structure. Blackberry, spice, tobacco and cocoa evolve through the mid-palate, leading into a long, assertive finish that speaks to both varietal confidence and serious ageing potential. Rich, structured and crafted with attitude, this is FU in full voice—energetic now, but capable of rewarding patience for years to come.

Its depth and structure make it a dream pairing for hearty dishes: think rib-eye steak, slow-cooked beef cheeks, lamb shoulder, pepper-crusted roasts, chargrilled mushrooms or mature cheddar. Whether poured alongside a big meal or savoured slowly on its own, this Cabernet delivers a commanding, full-throttle Barossa experience.
