Sidewood Estate Stablemate Adelaide Hills Pinot Gris 2018

Winemaker Darryl Catlin carefully selected the best parcels of fruit from the Sidewood Estate vineyard, ensuring that the fruit was picked at precisely the right moment. After a lot of time spent walking up and down the vineyard checking to see if the flavours were right, the fruit was then hand picked once it had reached optimum ripeness. It then began its journey through the Sidewood winery, initially focusing on keeping the juice as cool as possible. It was then pressed and the free run juice fermented at 14°-15°C for 2 weeks. Settled for a further 4 weeks and prepared for bottling.

The parcels of fruit were carefully selected at optimal ripeness and flavour development by winemaker Darryl Catlin before being harvested. Whole berries were partially used in the ferment essentially creating a partial carbonic maceration environment that enhances additional layers and complexity to the wine. The wine was pressed to barrel where it underwent malolactic fermentation before it was racked off its lees, put back to the barrel and left to mature for 16 months in French oak barriques. Estate bottled.

Winemaker Darryl Catlin carefully selects the best parcels of fruit from the Sidewood Estate vineyard, ensuring that the fruit is picked at precisely the right moment. After a lot of time spent walking up and down the vineyard checking to see if the flavours are right, the fruit is then picked once it has reached optimum Baume. It then begins its journey through the Sidewood winery, initially focusing on keeping the juice as cool as possible. It is then pressed and fermented at 14°-15°C for only 2 weeks. It is then settled and prepared for bottling as soon as possible so that we can capture the freshness and fruit intensity of the wine. 

Sidewood Estate Stablemate Adelaide Hills Pinot Noir 2016

The Sidewood Pinot Noir was handpicked from the Oakbank Vineyard. It is a blend of the Oberlin, 777, MV6 and Abel clones. The grapes were chilled in the cool room for 24 hours before being divided into clonal varieties and fermented seperately. These consisted of various batches of whole bunch and non whole bunch ferments. After ferment, the wine was Matured in French oak barrels for 10 months before it was carefully barrel selected for the final blend. Limited intervention. Wild yeast ferment, approximately 30% whole bunch in the final blend. Estate grown and bottled.
