Fruit is harvested in the cool of night to achieve a balance of fruit freshness and acidity. The wine is pressed and racked to stainless vats for fermentation. The wine is blended and secondary fermentation begins that gives the final bubbles. This second fermentation gives creaminess and texture to the blend.

The Daisy Victorian Sparkling Nv

Select parcels of fruit were sourced from premium vineyards across Victoria’s premium viticultural sub regions.. Selected grapes were harvested early in the season and fermented using a neutral yeast at low temperatures to assist in retaining the rich fruit flavours. Regular lees stirring at weekly intervals was undertaken to increase complexity and palate weight. After heat and cold stabilization, the base wine was then bottled under pressure to produce a wonderful rich complex style of sparkling.

Bitch Brut Cuvee Nv

Fruit was machine picked then underwent cool fermentation on skins prior to being pressed into stainless steel to ensure good colour and flavour. The wine was matured in stainless steel to maintain freshness; subtle yeast contact and secondary fermentation ensure that a perfectly balanced sparkling wine is the final result.

Grandsecco Wines, an innovative range of flavoured Prosecco styled premium sparkling wines. The flavours that have been selected are Elderflower, Rose Petal, Mandarin and Brut Curve, representing some of the most in vogue taste profiles in todays food and beverage market.  Using a premium Chardonnay wine base, the flavours have been subtly infused to deliver a beautifully balanced and textured sparkling wine with a hint of the flavour that does not over  bare the wonderful characteristics of the premium fruit used.
