Tasting Notes:

This alluring Viognier displays nectarine and peach aromas complimented with floral nuances of Jasmine and orange blossom. Flavours intensify on the palate with soft fleshy mandarin and marmalade fruit coming to the fore. The wine finishes with moderate length and hints of baked apple and spice.

Technical:

A mild summer and cool nights resulted in a long ripening period and good fresh fruit flavours in most white varieties. In the vineyard, flavour ripeness came well before sugar levels were achieved and thus lower alcohol 2017 white wines will be prevalent.

As ripeness was achieved the Riverina Viognier grapes were harvested in the cool of the night in retaining freshness and minimising oxidation. Once arrived at our Yenda based winery, the fruit has been crushed, destemmed and chilled to our bag presses. After a gentle pressing the resultant juice is clarified before a slow fermentation at cool temperatures of 14-16C using a carefully selected yeast in optimising lush varietal flavours. The wine then underwent 6-8 week maturation on yeast less which has built mid palate weight and aided in the expression of soft creamy notes. The Viognier was then blended, filtered and bottled for all to enjoy.
