Tasting Notes:

Pale straw yellow in colour. The bouquet is full of apple and pear. The palate is soft with bold minerality supported by subtle acidity focusing the flavours of honeysuckle, violets and has perfectly balanced acidity.

Technical:

Harvested at the cool of night and transported to the winery where we crushed the fruit quickly to separate the clear juice from the skins. We used specific yeast for Pinot Grigio and after a cool fermentation the wine was carefully filtered and bottled to retain all the appealing fruit flavours.
