Tasting Notes:

Light green/gold in colour. Great varietal character with vibrant tropical fruits an elegant natural fruit crispness, which ensures the citrus undertones work harmoniously without over dominating the nose. A Chablis style with crisp elegant flavour, bristling with tropical fruits and a dash of citrus lime undertones.

Technical:

Chardonnay grapes were picked based on flavour profile to ensure the flavour spectrum we want to achieve from lively citrus flavours such as lemons and limes to peach and tropical flavours. We pick in this way to ensure that when blended, the wine is balanced with flavour and natural acidity. Pressed straight to fermentation, where we used wild yeasts to initiate and complete fermentation, and once finished the wine is left on lees, with the lees kept in suspension to build complexity until blending and bottling.
