Tasting Notes:

This Sauvignon Blanc displays aromas of green grass, gooseberry and sweet capsicum with underlying tropical notes, culminating in a zesty palate that displays crisp snow pea with hints of passionfruit, and a delightful fruit depth that persists to a lingering finish.

Technical:

A mild summer and cool nights resulted in a long ripening period and good fresh fruit flavours in most white varieties. In the vineyard, flavour ripeness came well before sugar levels were achieved.

The fruit was harvested in two lots a week apart so as to attain the herbaceous flavours from the earlier harvest and riper passionfruit flavours from the final harvest in late February. Both parcels were fermented separately at cool temperatures for 16 days. We then extensively tasted proportional blends of the two wines until we were satisfied that the wine that best expressed the region and the Sauvignon Blanc varietal characteristics was to be bottled.
