The Bayliss Road Single Vineyard McLaren Vale Chardonnay 2025 comes from a meticulously tended vineyard on Bayliss Road in the Tatachilla sub-region, an area known for producing richly textured, beautifully expressive Chardonnay. Pale green–straw in hue, the wine opens with an inviting bouquet of green apple, ripe peach, almond and fresh grapefruit, all seamlessly framed by a refined French oak influence that speaks to the precision of its craftsmanship. Fermented across both oak and stainless steel, the wine developed early aromatic purity before the oak component underwent daily lees stirring, building a subtle creaminess and adding depth to the mid-palate. After maturation for nine months in seasoned French oak, the final blend was assembled and bottled under screw cap to ensure the vibrancy of the fruit and the elegance of the oak remain beautifully preserved.


The palate delivers a harmonious balance of stone fruit, citrus brightness and almond meal complexity, finishing with a long, refined line of natural acidity that makes this Chardonnay both flavoursome and poised. Its combination of texture, freshness and subtle nutty oak places it comfortably among the standout modern styles from McLaren Vale. Enjoy it alongside dishes such as grilled whiting with lemon butter, roast chicken with herbs, creamy garlic prawns, potato gratin or a ripe triple-cream brie, all of which complement the wine’s layered palate and refined structure.
