Certified 100% organic, the grapes were hand-harvested in the cool of morning, with the juice carefully cold settled for 48 hours before fermentation in stainless steel, while a small portion was wild fermented in seasoned oak for added texture and complexity. Left to mature on fine lees for four months, the result is a Sauvignon Blanc of elegance and purity, brimming with tropical fruits, citrus zest and delicate florals. A fine mineral acidity runs the length of the palate, balanced by a subtle hint of oak that gives depth and structure.
