Tasting Notes:

Complex on the nose with aromas of honey and brioche. This is followed by a host of spices (ginger, cumin, caraway and more), before evolving into notes of mirabelle plum, dried apricot and fresh hazelnut.

A lively and clean opening that reveals notes of white plum, walnut and aniseed. Its freshness is beautiful and its tension incredible.

Technical:

The assembly of this 2007 vintage is composed of 70% Pinot Noir and 30% Chardonnay. It features 91% Grands Crus and 9% Premiers Crus. A total of 14 crus can be find in the blending. The fermentation is entirely in oak barrels.

Bollinger R.D. is sold just a few months after being disgorged, with a very low dosage known as “extra brut”, at just 3 grams per litre. The recent disgorgement guarantees the remarkable freshness of the wine.

The 2007 harvest, one of the earliest for a century in Champagne produced grapes of an exceptional quality. The contrast between the intensity of the spicy aromas, the notes of fruit, brioche and honey, and the wine’s freshness makes for a rare tasting experience of this vibrant cuvée.

(Disgorged July 2020) Light to medium, bright yellow colour, the bouquet toasty, biscuity, spicy and honeyed, complex and very nutty, very Bollinger—but the rest of the wine is restrained and refined and more elegant than usual. This is a finer, more restrained RD with crisp, lively acidity and a very dry finish. It's just 3 grams per litre of dosage: very dry. It has body and richness but is not as big or broad-shouldered as Bollinger usually is. Refreshing acidity cleanses the finish and it has marvellous vitality. An excellent and slightly different RD that still appears to have many years of life before it. (70% pinot noir, 30% chardonnay)

R.D. 2007 is an unusual Bollinger that sits a little out the house’s usual robust style. Yellow-straw in colour, it looks promising in the glass with a very fine, lively, persistent mousse. On the nose, it’s a very complex mélange of nutty aromas, hints of pear, bakery spices, ginger and lightly toasty notes, rather traditional elements to be sure, but with more delicacy and restraint than usual. The palate follows suit with elegant, fresh top notes to a palate that marries richness with finesse beautifully. Dosage is low at 3g/l, while acidity is high at 7.5 g/l, both helping to construct a wine that’s vibrant, poised and complete right now, but very worthy of further bottle age. A great Champagne.
