Bright deep maroon with a purple tint.Blackcurrant and dark cherry perfumes are complemented by savoury notes of miso, mushroom, dried oregano and forest twigs. Underlying hints of custard and charry, spicy oak round out the lovely aroma. Tangy, bright black cherry fruit arrives on a pure, polished stone texture. This builds to a powdery, long, dry finish with lingering black forest cake flavours.

"Distinctly regional smelling with choc-mint and bayleaf, ripe dark berries, and creamy nougat oak. It’s full of flavour, ripe fruit, ripe and dusty tannin, something of a savoury nori character, turning more to red berries on a pretty long and chalk dusted tannin finish. Hearty. Plenty to get stuck into here."

"Deep ruby colour from centre to rim. Dusty earth, tobacco leaf and black berries on the nose. A savoury earthen note opens up the palate with black olives and star anise sitting alongside. Dark fruit sits further at the back, making it a very savoury expression of cabernet. Firm tannins give tension and drive, accentuating a gravel and earth character from entry to finish. Certainly, a more robust and structured wine. Time cellared would be well rewarded"

"A full-bodied Cabernet Sauvignon with 15% Malbec added to the blend. Vibrant with ripe dark fruit, dark cherry, vanilla, mineral and toasty, spicy flavours on the palate. Enjoy with a grilled steak or a vegetarian moussaka."
The individual batches were destemmed and sent as whole berries using only wild yeast residing on the fruit. Cabernet parcels were left on skins for 8-20 days to extract a fine backbone of tannins and blackcurrant laden fruit. Open top and use of aeration during fermentation helped to promote a clean fruit perfume, soften the tannins and bring life to the wine. The resulting wines were matured in fine French oak for 12 months prior to blending, with limited racking to help preserve the delicate wild characters captured in this low intervention approach.
Similar to the previous season, the 2018 vintage experienced cooler than average conditions. Spring and early Summer delivered intermittent cool then moderate weeks before a run of below average temperatures in January and February. Late January rain led to a fear of disease, however a beautiful period of ripening followed with ample sunshine and strong daily sea breezes preserving vibrant fruit flavours and acidity. Our white varieties ripened with ideal sugar levels and high malic acid content for the third year running, resulting in a desire to allow some natural malolactic ferment in our Chardonnays. Meanwhile, the reds ripened slowly and gently through a dry Autumn ensuring fully developed tannins and a slightly riper and fleshier fruit profile to 2017.
