Tasting Notes:

Fox in the Hen House Barossa Valley Shiraz is rich, dense and intense with an inky, mulberry- hue. A subtle and sophisticated nose leads to a powerful palate of ripe black cherries and the darkest and richest chocolate, integrated with ripe dark juicy plum flesh, traces of freshly ground coffee beans, hints of black olive, peat and aniseed. Textural and well-balanced, this wine features mildly smooth tannins, leading to a powerful but harmonious finish.

Technical:

Growing conditions began well for the 2015 Barossa vintage with above average early and late winter rains that filled the soils and dams so the vines got away to a healthy start. A drier and warmer than average spring, with some frosty nights, meant some vineyards were affected with mid-late spring frosts, resulting in reduced yields in some parts of the Barossa. Rain, mild conditions and cool nights in mid-summer were favourable for steadily ripening grapes and vibrant flavour development. A burst of late summer hot weather resulted in an early start to vintage across much of the valley, with many varieties ripening together. The 2015 vintage is remembered as one of the shortest and fastest vintages following an almost near perfect growing season. A great vintage was capped off by average grape yields and high quality fruit. The Shiraz was de-stemmed, not crushed, into open fermenters, then pumped over and cap plunged 2-3 times daily during ferment for 10-14 days to maximise colour and flavour from the skins, and minimise phenolic extraction. The wine is then Basket Pressed off the skins and 30-40% undergoes barrel ageing in a mix of 70% French and 30% American new oak for up to 18 months. The result is a deeply coloured, opulent Shiraz-fruit driven wine with a smooth, fleshy tannin mouthfeel and lingering, subtle oak flavours complimenting the palate finish.

The nose is elegantly proportioned with some depth and rounded concentration showing ripe dark-red and black berried fruits with some minerally reduction, unfolding some liquorice and spice notes with aeration. Full bodied, the palate is soft and plush with a rounded heart of ripe blackberry fruit with black plums, spices and liquorice, and some reductive mineral and slightly bitter hints. The fruit is underlined by plenty of alcoholic power and drive, and the wines flows along a lightly extracted, supple palate line with some texture, leading to an elegant, slender, lingering finish. This is a soft and plush, ripe, rounded Shiraz with blackberry and plum fruit with liquorice and spices and a little reduction with some power and light grip. Match with barbecued red meats over the next 3 years. Barossa Valley fruit fermented to 14.9% alc., the wine aged 6 months in seasoned French oak. 16.0/20"
