Tasting Notes:

The Chain of Ponds Pilot Block Adelaide Shiraz 2021 continues the legacy of this trophy-winning Adelaide Hills producer, crafted under the experienced eye of acclaimed winemaker Greg Clack. Pouring a deep, dark plum-red with a subtle purple hue, the wine opens with an enticing aromatic profile of ripe plum, blackcurrant and dark cherry, enriched by cinnamon, baking spices, vanilla and mocha. The bouquet reflects both the cool-climate finesse of the Adelaide Hills and the meticulous detail that has long defined the estate.

On the palate, the wine is rich, full-bodied and generously layered, driven by flavours of blackcurrant, dark plum and blackberry, with flecks of dark chocolate and a delicate violet lift adding both brightness and depth. Smooth, velvety tannins build structure without heaviness, while balanced acidity supports a long, savoury finish boosted by subtle spicy oak. The result is an elegant yet powerful Shiraz that sits comfortably among the region’s standout releases, following the strong form of the previous vintage, which earned 90-point praise from both Sam Kim of Wine Orbit and Ray Jordan of Wine Pilot.

Its richness and cool-climate spice make it a natural partner for chargrilled lamb cutlets, slow-braised beef, pepper-crusted steak, mushroom ragù, roasted root vegetables, or a platter of aged cheddar and cured meats. Enjoy now for its plush fruit and aromatic lift or cellar confidently to allow further complexity to emerge.
