Lifted blueberry fruit and cherry cola notes, wild thyme, star anise, savoury & earthy characters.
Shiraz and Grenache de-stemmed together to open fermenters for a short pre-ferment maceration. Gentle pump overs initially, increasing to 4 times daily with ferment peak at 30ºC. Drained & pressed after 10 days, settled for 24 hours before racking to tank and oak for maturation. Further blending with select parcels before bottling.
Shiraz (67%), Grenache (26%) and Mourvèdre (7%)

A part-estate, part-grower blend of 67/26/7% shiraz/grenache/mourvèdre. The analysis of 13.5% alcohol, 6.1g/L TA and 3.46 pH are an all-up sweet spot for mouthfeel. On skins 12-14 days, matured for 6 months in used puncheons or tank (to retain freshness). Blending at different times for different purposes is part of 'the knowledge.' The wine is ridiculously good, likely to cause dribbling when tasting. And yes, another 95-pointer.
