Coppermine Road runs parallel to our very best Cabernet vineyard in McLaren Vale, just metres from the winery, cellar door and restaurant. Planted to an almost extinct clone, this vineyard rarely yields greater than one tonne to the acre.
Small batches of grapes are gently crushed and then transferred to five tonne headed down open fermenters. These batches remain separate until final blending. Foot treading is undertaken two thirds of the way through fermentation. The wine is then basket pressed and transferred to a mixture of new and used French oak barriques to complete fermentation. The barrel ferments are aged on lees, there is no racking until final blending and no fining or filtration.
A cabernet with a bold and refined character. The colour preludes an intense wine with a shiny ruby red. The nose is more open and straightforward, with cassis, red cherries, red capsicum, and an elegant herbal tone of sage and fresh basil. The palate is surprisingly fresh and ready, with an intense wave of maraschino cherries, freshly cut pomegranate, and cranberries. An undertone of ferrous notes aligned with a herbal finish with sage and tomato leaves makes this wine opulent and sophisticated. The tannins are fine-grained and well connected with the body and acidity, showing the perfect balance between the use of new and old French oak barrels without masking the natural refined grape tannins. The finish is extremely lingering, with a refined white pepper at the end. Absolutely ready to drink now but can also cellar for up to 20 years.

"A combination of new and older French oak barrels are used here to complete fermentation of this warmer climate Cabernet. Sure, it might not replicate Bordeaux, but then is there any need to do that? These wines are chock full of flavour. Warm climate Cabernet seems to be a most underrated style. An opaque magenta/maroon hue, it opens with a touch of toasty oak. Aromas emerge of chocolate, animal skins, tobacco leaves, aniseed, blackberries, dry herbs, soy, beef stock and kirsch. A wine of power and concentration with impressive length, this is a muscular style with firm tannins on a lingering finish. Twelve to fifteen years."

"Intense notes of Bonox, char and roasted fennel take the lead. Cola and blackcurrant jam join in too. Brash and bold aging flavours, stewed plums and leather are contained by a fine yet firm rail of tannins that guides the wine across the palate. It's trying to hold on to its freshness while tertiary notes are beginning to take hold. It's heady and upfront with ample structure. It will benefit from short-term aging, but its boldness is hard to ignore at the moment."

"From low-yielding vines and an apparently almost extinct clone. This is intensely fruited, leaning heavily into classic crème de cassis notes, fringed with a decent hedgerow of herbals. Although this is made to age, and the tannins are typically commanding, it is showing plenty of positive development at this stage. It’s older school of feel, and that will suit many just fine."
