Tasting Notes:

The St Hallett Butcher’s Cart Shiraz 2024 is a richly layered expression crafted from a blend of 63.9% Barossa Valley fruit and 35.9% Eden Valley fruit, harnessing the depth and generosity of the Barossa with the lifted minerality and vibrancy that come from higher-altitude vineyards. Sourced from an iconic producer established in 1944 and long recognised as a 5 Red Star Halliday winery, this release continues the house’s tradition of power, precision and regional authenticity. Each vineyard lot was handled individually before ageing for ten months in a mix of new French and American oak and seasoned American oak, allowing the wine to build structure while preserving its expressive fruit character.

The nose bursts with black cherry, raspberry, tilled earth and subtle savoury tones, enriched by hints of vanilla, nutmeg and delicate milk chocolate carried from its well-judged time in oak. The palate is bold, full-bodied and wonderfully textural, opening with ripe blackberry and plum before shifting into layers of exotic spice and a long, persistent finish. Dense, fine-grained tannins support the fruit in perfect harmony, showcasing the refined craftsmanship behind this wine and echoing the pedigree of the previous vintage, which received 95 Points from James Halliday’s Wine Companion.

This is a Shiraz built for hearty meals and rich flavours—pair it with a marbled scotch fillet, charred broccolini, slow-braised beef ribs, roast lamb with rosemary, or a generous platter of aged cheddar and cured meats. Its structure and depth make it immensely satisfying now while offering the potential to evolve gracefully with short- to medium-term cellaring.
