The Ashton Hills Adelaide Hills Gamay 2025 is a vibrant, cool-climate expression of this increasingly popular variety, crafted from hand-harvested fruit grown in Woodside, Adelaide Hills. Fermented with indigenous yeasts, 25% whole bunches, and a portion undergoing carbonic maceration, the wine was matured for eight months in seasoned French oak and stainless steel to preserve its bright fruit, aromatic lift and freshness.
Fragrant aromas of wild strawberry, blackberry and rosewater are complemented by subtle spice and black tea notes. The palate is lively and juicy, offering raspberry, cranberry and delicate earthy characters, supported by crunchy acidity and fine, dusty tannins for a long, refreshing finish.
