The Grail Of Lisa McLaren Vale Old Vines Shiraz 2017

Aromatic fruit driven in its youth, the primary characters are blackberry and some sweeter strawberry notes fill the glass. Complexity is derived from some chocolate, licorice and roasted coffee along with the presence of gentle oak. The full bodied fruit forward palate is filled with the flavours of ripe red and black berries, perfectly encapsulated by the fine oak tannins that lead into the long finish.

Intense and concentrated ruby red colour. Bouquet of ripe red fruit on a spicy background. On the palate it enhances all its freshness with just and balanced tannins accompanied by a long persistence.

Our take on the classic Barossa Shiraz, this wine has a inky purple colour with a deep red hue. Aromas of dark plum, coffee and black pepper. The palate is rich and voluptuous, with the classic blue fruits and smooth silky tannins. This wine has great capacity to age and will continue to soften and develop more secondary fruit characters. 


The Wine Barossa Valley Marananga Shiraz 2016

Purple and crimson with a dense centre and a youthful edge. Blackberries, mulberries and cherries with hints of charred oak. There is plenty going on with black cherries, vanilla, and some saddle leather characters. The fruit is quite solid yet repressed by the oak and tannin. Will lay down well with some time in the cellar, fruit will prevail creating an elegant, savoury style of wine.

Chain of Ponds Section 400 Adelaide Hills Pinot Noir 2017

Deep cherry red with a light garnet hue. Intensely complex nose with plums entwined with spice and the earthiness of beetroot while having fresh fruit lift of dark cherry and rhubarb. A touch of fennel and dried herbs helps give a lift and balance to sweeter fruits. On the palate there is generous fruit weight displaying cherry, satsuma plum and blackberry fruits. This is integrated with beetroot, rhubarb and lifted spices. Full bodied with firm, slightly textural but velvety tannins and balanced acidity, great fruit length with good savouriness. 

Technical:

The Grail Of Lisa McLaren Vale Old Vines Shiraz 2017

Sourced from a small vineyard from a block aged 60 years plus. Small bunches ensured fruit purity and intensity, which is a key requirement for this wine. The fruit is picked and crushed into old vats where fermentation began via the addition of wild yeasts found on grape skins. Careful extraction and short post ferment maceration is followed by basket pressing. The wine under went malolactic fermentation in American oak and then was aged in the same oak with some skins added back to add further fruit character and ensure the fruit flavour was as intense as possible to ensure it was not over whelmed by oak but complimented by it. Bottled with minimal filtration or fining. 

A wine which will benefit immensely with time in the cellar to settle and develop. It will have a great lifespan of around 10 years.


Riolite Vini Sangiovese Nero d'Avola e Corvina The Blend

From a selection of the best grapes harvested between the first and third week of October, carefully de- stemmed are vinified in modern stainless steel tanks, with maceration on the skins for an average duration of 15-18 days at a temperature of about 26 ° centigrade. Once the alcoholic fermentation is complete, the wine carries out the malolactic fermentation. After 6 months of aging the blend is made between the three grapes and the bottling.

Whistler Wines Estate Barossa Valley Shiraz 2015

Entirely from our Heysen Estate Vineyard, this wine is a blend of all three clones of our Shiraz- Kalimna 3C, 1654 and BVRC30. Deep loam over clay, with outcrops of quartz stone and ironstone. 

Harvested as separate clones and fermented wild in old concrete fermenters. Foot stomped and basket pressed, then stored in 70% American and 30% French oak for twenty months. The individual clones are then blended together to make a more complex wine. Bottling with no fining and no filtration. 


The Wine Barossa Valley Marananga Shiraz 2016

Hand selected and hand picked fruit was used for this wine and it underwent fermentation in stainless steel open top fermenters, and was pumped over twice a day, the wine was pressed then transferred to new hogshead barrels where it completed its malolactic fermentation. The wine was topped regularly and racked once whilst maturing in barrel.

Planted in 1970 (48 years ago) Only local knowledge, a firm hand-shake deal and an outrageous cash exchange allowed us to secure a small parcel this sumptuous fruit. And even then I have to keep it secret. If the other producers find out the vineyard owner will be in trouble and that the end of the fruit.

The unique micro-climate ensures long slow flavour development. Delivering an intensity of concentration and length rarely found anywhere else in the Barossa.

The fruit is harvested in the cool of the night to retain flavour and freshness before destemming and inoculation with specific rare yeast – a Italian strain that specifically ferments at cool temperatures.

It only serves to enhance the natural fruit flavours.

The ferments are undertaken in traditional 1 ton open fermenters for 8 days, each day the fruit is hand plunged pushing the skins under the fermenting juice to assist in great colour and flavour development of the wine. Once a day the juice is drained from the fermenter and then returned over the skins. With approximately 2 Baume the fermenting wine is drained from the fermenter and the skins basket pressed by hand. Total extraction is limited to a maximum of 500 litres per ton – extremely lower compared to an industry average of 750 litres per ton.

The fermenting wine is gravity transferred into a mixture of new and 3 year old French and American hogsheads to complete primary fermentation and malolactic fermentation. Upon completion the wine is racked and returned to mature for a minimum period of 21 months.


Chain of Ponds Section 400 Adelaide Hills Pinot Noir 2017

Fruit for the Section 400 Pinot Noir is sourced from two Adelaide Hills vineyards and three blocks. A combination of east and west (Kuitpo) and north facing slopes (Gumeracha) with different clonal material (MV6, D4V2, D5V12, 777, 114) to produce distinctly different fruit flavours which combine to complement each other in the final wine. All vineyards are managed with strict VSP trellis. 

All bar 20% of the grapes were crushed and de-stemmed soon after receival and soaked for 48 hours before inoculation, the remaining 20% was fermented as 50% wholebunch and 50% crushed fruit. The blocks were partially fermented in a combination of open fermenters with extended maceration and the balance fermented in potters using minimal cap management. Fermented with a varietal enhancing burgundian yeast to preserve the fresh primary fruit aromas of Pinot Noir and stabilise colour. It was pressed off skins after 7 days of fermentation and transferred straight into French oak 60% (7% New) with the balance remaining in stainless to preserve freshness. Malo-lactic fermentation was completed while in oak and stainless and the wine was left on full lees for 6 months to gain complexity and mouthfeel during the ageing process.
