Einzellage Moculta Eden Valley Chardonnay 2018

Sourced From One Of Eden Valleys Most Revered Growers from a single vineyard in the Moculta sub region. Fruit was picked in early hours of morning when temperatures were very low to ensure fruit remained crisp whilst being transported to winery. Crushed within 3 hours of picking it was chilled and pressed, as we needed to ensure the fruit was as pure of possible. After settling it racked off lees then warmed and inoculated with a select yeast strain. Fermentation occurred in tank at cool temperatures and select parcels were matured in oak barrels to extend the palate and provide a buttery like complexity. Once the wine was clarified it was bottled and aged to ensure drinkability upon release.

The Dorothy Victorian Chardonnay 2018

Select parcels of fruit were sourced from premium vineyards across Victoria’s premium viticultural sub regions.. The fruit was picked during the cool early hours of the morning. The fruit was then rapidly transported to the winery and immediately crushed, chilled and pressed. It is then allowed to settle before being racked off of juice lees, warmed and inoculated with selected dried wine yeasts. Fermentation occurred in stainless steel tanks of various sizes at 12-18 degrees. 30% of the wine of the wine was fermented in French oak barrels to add a touch of complexity and texture to the wine. The finished parcels are carefully assessed, with only the finest chosen for the final blend prior to bottling.

Songlines Estates Leylines Chardonnay 2018

“Songlines” are invisible pathways which criss cross the land all over Australia and stretch across continents and ages. The exceptional wine is named Songlines as it perfectly encapsulates the importance of the land, people and knowledge learned over time and across continents.

Leylines is made with the same meticulous care and attention as Songlines and Bylines but with a smaller price tag. The grapes come from a single vineyard, which is younger than those used for Songlines and Bylines and the fruit has been specifically hand chosen for its approachability as a young wine. Harvested at dawn the grapes were transported to the winery and immediately whole bunch pressed followed by fermentation where individual batches under went lees stirring to build body. Once filtered the wine was bottled to capture the full fruit flavours and ensure the complexity of the wine was highlighted in its youth.

Corte Al Passo Chardonnay Bianco IGT Toscana 2017

The grapes are harvested well ripe in early October. White vinification with cryomaceration of the skin for 7 days. to extract the primary perfumes. It follows white vinification at a temperature of 14- 16 ° C. It remains on the noble lees for 4-5 months before bottling.

Lambert Estate Pristine Barossa Valley Chardonnay 2013

Minimal intervention is the goal for this unbaked wine. Chardonnay is an extremely versatile variety and it shows with this approachable, easy drinking style. Cold fermented for 24 days, the fruit was harvested just before peak ripeness to enhance freshness and delicacy not often realised in Chardonnay.

Bitch Chardonnay 2016

Harvested at the cool of night from a single vineyard in the Riverland region of South Australia. Crushed and chilled, the fruit is allowed skin contact in press for 3 to 4 hours for maximum flavour extraction. Cool fermentation in stainless steel tank to dryness; 6 weeks on light lees with regular stirring several times a week with a small amount of oak contact; cold settled and racked to bottling.
