Tasting Notes:

Pale straw with a vibrant green hue. Fresh lemon zest with cut grass and dandelion notes. Pristine lemon juice and snow pea flavours are enhanced by an impressive mineral acidity. This is a classic example of a fresh and zesty Hunter Valley Semillon with a complexity and structure that will age gracefully.

Technical:

Winemakers talk in almost reverential tones about the 2014 Hunter Valley vintage, which has been hailed as one of the best ever. Everything simply fell into place. Good November rains were followed by lots of sunshine but not excessive heat, then a dry January and February allowed winemakers to harvest fruit at optimum ripeness, to suit specific needs. Yields were good, with quality even better. 

Nothing was left to chance to ensure this single vineyard Semillon presents the Hunter Valley’s flagship white variety at its very best. Several vineyard assessments in early January preceded harvest to ensure the gradually ripening grapes reached the desired varietal flavour and structural balance. The fruit was handpicked, pressed immediately on arrival at the winery and allowed to cold settle for 48 hours. Cool ferment temperatures were maintained throughout to retain the delicate aroma and flavours. At the completion of fermentation the wine remained on light lees for three months in stainless steel tanks, the blended prior to bottling.
