Tasting Notes:

This wine is an excellent example of a modern style of Cowra Chardonnay. The colour exhibits freshness with pale straw and green tinges. The aroma of the wine displays fruit purity with classic white peach aromas. The oak spice and brioche characters are complimentary, and round off the complexity of the wine. The palate is reminiscent of the aroma, and displays a personality which excites. The minerality and textural mouth feel are well balanced by a full white peach flavour which is classic Cowra Chardonnay.

Technical:

The Harvest decision was made when the fruit displayed cool climate like white peach flavours. The acidity was evident and was in perfect balance with regard to flavour profile and sugar ripeness, the flavour intensity experienced in the vineyard. Hand harvesting was used to ensure freshness upon delivery to the winery. It was then gently pressed with the free run cut made at 500 litres to the tonne. The juice was cold settled for 48 hours then racked and warmed to 15 degrees. The juice was inoculated with Burgundian yeast and transferred to new and older oak on the 3rd day of fermentation. Following partial MLF (25%) and lees maturation for 8 months, including fortnightly stirring, the wine was racked and prepared for bottling.

Fruit for this wine was selected from our original planting of Chardonnay. The block was planted in 1988 and is trained on a single wire VSP system. Yields were extremely low due crop thinning before veraison; we achieved a meagre 3 tonne to the hectare. Due to the light crop load the flavour profile peaked earlier with respect to sugar accumulation and natural acid degradation.
