Tasting Notes:

Stone fruits and nectarine complimented by citrus.Grapefruit and lime, apple and pear balanced nicely with citrusy acidity. Balanced and quite textural mouth feel with some mid palate creaminess framed by subtle French oak tannin.

Technical:

Machine harvested in the cool of the night to retain natural acidity levels. The fruit was destemmed and pressed to stainless steel tanks and inoculated with select yeast strains. Fermentation took place with wild yeast in French oak barrels. Post ferment, the wine was kept on lees for 3 months with stirring to promote a more complex palate in a mixture of stainless steel and oak before clarification, filtration and bottling.
