Fresh, delicate, and varietally expressive, the Songlines Estates Bylines Adelaide Hills Sauvignon Blanc 2024 captures the purity of its cool-climate origin with precision and finesse. The fruit was de-stemmed (but not crushed) and gently pressed to stainless steel before undergoing cool fermentation with select yeast strains to preserve aromatic integrity. Extended time on lees added structure and textural finesse before stabilisation and bottling.

The nose is bright and lifted with sweet citrus, passionfruit, grassy herbs, and green capsicum, offering a textbook Sauvignon Blanc aromatic profile. The palate follows with zesty tropical fruit, refreshing passionfruit notes, and a vibrant acid line that gives the wine energy and drive.

This wine is perfect with grilled fish tacos, green papaya salad, goat cheese and herb tart, or oysters with a citrus mignonette—pairings that enhance its fresh and herbaceous style.
