The De Bortoli Noble One 2021 is the pinnacle of Australian botrytised Semillon, a wine that has defined its category since its inception. Crafted from fruit grown by two master growers – including one who has been producing Botrytis Semillon for Noble One for nearly 40 years – this release reflects both heritage and precision.
The 2021 season unfolded in two distinct halves: early rains in January and February triggered Botrytis, while a long dry spell slowed its spread until Easter rains reignited it. Warm late autumn air accelerated the process, prompting harvest in April under perfect conditions. The result is fruit that thrived with complexity and concentration. After gentle pressing and careful fermentation, the wine was matured in French oak barriques and tank for 12 months, ensuring texture and depth.
In the glass, Noble One 2021 is vibrant and seductive, with layers of candied citrus, honey-drenched apricots, nougat and nutty vanillin oak. The palate is luxuriously textured yet perfectly balanced by vibrant acidity, delivering both richness and freshness. This legendary sweet wine has won seven trophies and thirteen gold medals, further solidifying its reputation as one of the world’s great dessert wines.
Awarded 97 points and named Sweet Wine of the Year 2025 by The Real Review, and 96 points with a Gold Medal from Halliday Wine Companion 2025, Noble One remains a benchmark in its class. "A rich golden straw hue in the glass. Heady on the nose, mango, cumquat and cooking toffee aromatics. A symphony of golden tropical fruits with balancing citrus peel freshness at the top end. Deeper down we find butterscotch and figs all being lifted by powerfully focused acidity and a pithy sense of grip that ensures prodigious length and a finish that astounds with its remarkable sense of vitality."

"Fresh Kensington mango cheek, lemon verbena and yellow wattle blooming in abundance. Candied pineapple and fresh apricot. Tangerine skin, lemon curd and yuzu. Lusciously sweet and supremely well balanced by nougatine oak and almond shell. Orange blossom honey sweetness with lovely, grainy, pithy grip and a dried apple flesh. A school toffee nostalgia coupled with the wisdom that this wine will live for decades."
