Tasting Notes:

The Mill Cabernet Merlot 2013 once again displays classic Cab/Merlot flavours, dark berry fruits namely blackberry and blackcurrant with hints of varietal mint and clove spice and cedar oak. The palate has matured well to produce a medium to full bodied red wine with a finely textured structure. This wine is a fantastic blend of these two varieties. A classic modern Australian red that is suitable for slow cooked meals or simply enjoyed on its own.


Technical:

The Cabernet fruit in this wine was sourced from two of the premium vineyards within our hundred mile radius. The 2013 season was very suitable for Cabernet, optimal weather with minimal rain events. The fruit from the hilltops vineyard had one of the most elegant flavour profiles displayed by cabernet sauvignon from the Hilltops region in a number of years. The Cabernet was picked at optimal ripeness with blackcurrant/mint characters and ripe chalk tannins at 14.2 Bé on March 18th.The Merlot portion was selected from an orange vineyard which has traditionally produced excellent Merlot. The Merlot fruit was harvested on March 29th.

The Cabernet and Merlot portions are both made separately until final blending which took place in July 14. The final blend contained 85% Cabernet and 15% Merlot. Both the Cabernet and Merlot were fermented in static stainless steel fermenters following crushing with the rollers open. The ferment was seeded with Bordeaux red yeast and maintained at 30ºC in the cap during fermentation. The ferment was pumped over twice daily for approximately one hour for six days. On day 3 of ferment it was racked and returned. Following ferment the wine was transferred to a variety of maturation vessels for Malo-Lactic Fermentation. The wine was racked three times, every two months before final maturation for a period of 12 months.

The winemaker for this one should stand up and take a bow. What a great little ripper of a red blend and at around $18, it has bargain drinking written all over it. Yes I am raving on and banging on about it to all and sundry because frankly it is one of those wines that delivers at all levels. The price representing value, the drinkability factor of the red wine blending of synergous grape varieties, judiciously made, the fruit is pure and clear and distinctively imparted so what it is - is what you get from aroma to palate, that there is some more development ahead that will make this something you can drink well into next Winter as well and lastly the food friendly nature of it, thinking winter cuisine, slow cooked lamb with Morroccan spices and raisins. Loved it.

This wine is mase from grapes grown in Young, in the Hilltops region of NSW as well as in Orange. The Cabernet Merlot won a Gold at the Sydney International Wine Competition.

Illawarra Mercury

Made at Windowrie’s Canowindra winery using 85 per cent cabernet from the Hilltops region around Young and 15 per cent merlot from Orange. A good solid red in which the softer merlot smooths out the middle palate while still leaving plenty of cabernet’s renowned astringency. Good value.

Top Pick, Hobart Mercury

Vibrant purple/black colour, a fairly shy nose at this youthful stage but more expressive in the mouth with blackberry flavours and earthy, smoky characters on an elegantly balanced palate that finishes nicely fresh and with a lift of fruit sweetness. Try it with lamb’s fry and caramelised onions.
